Much to our chagrin, a labour intensive and fan favourite bowl! Made with coconut cauliflower rice, grilled eggplant, roasted sweet potatoes, zucchini, brussel sprouts and broccoli, sautéed tofu, cherry tomatoes, microgreens and toasted cashews.
